In January, company employees prepare all the cod dishes who in that very month embark on a long journey from the Barents Sea to the warmer waters of the Norwegian coast. But the basics are - first make the perfect meal, then freeze the stew and ingredients down to very low temperatures. Then slowly and gently add heat in a way that neither taste, colour, energy nor vital vitamins gets the chance to escape. The process continues until all the water has disappeared. And voilà, we have perfect dehydrated food.
